Crockpot Savory Onion Pot Roast

I have a cookbook that I got from my mom, and it is my absolute favorite go to. It’s nothing special just an old Betty Crocker cookbook with pages covered in spatters and a worn spine. I have had it since she gave it to me in 1985 when I got married and its one of the few things that has survived 20+ moves over the last 30 or so years. It has easy to follow recipes and for some reason it has just always been my go to. This is an adaptation of one of my favorite recipes from that book.

I love to cook with my jelly and see what I can create. I will put jelly in everything from sweet jalapeno in a salad dressing to Tomato Jam in my chicken soup to fancy cakes and cupcakes as a filling for a dessert. I have used the Carrot Ginger to make stir fry and jalapeno berry glazed brussel sprouts in brown rice with quinoa was stupid delicious it replaced the cranberry sweetness beautifully.

I love the flavor of the savory onion jam; it does have a sweetness from the brown sugar, but it has such a deep rich flavor with that hint of acidity that it can be used almost anywhere. I was so excited and proud when the savory onion jam was featured on a pulled pork sandwich at a local bar. I have customers tell me all the time about how they use it as an ingredient in meatloaf or a topper for Hamburgers. My second favorite use would be tossing the jam in with Roasted Vegetables, but this is my favorite way to use it. I feel there is a homey feeling you can only get with a Sunday roast meal even if it’s a regular old Tuesday night. Try it out, it could not be any easier than 10 or so minutes of prep time and a few hours roasting on the counter in a slow cooker but what a payoff. It’s a beautiful meal and you will be happy you did.

How to make Savory Onion Pot Roast in the Crockpot

Put flour, salt, pepper, and garlic powder in a shallow container. Dredge roast in the flour mixture coating all sides evenly. In a large fry pan or Dutch oven sear your roast on all sides until a golden-brown color. Be patient with this. You want that beautiful brown color. What you are doing is removing any raw flour taste and making the almost roux like coating that will create your gravy. The more patient you are with this this step the better your gravy will be. Remove the roast and Place into slow cooker. Into the same pan pour your cup of water and the packet of onion soup mix and deglaze your pan.

Put the savory onion jam directly onto the roast. Add your carrots to the slow cooker and pour the deglazing liquid over the top of all ingredients. Put your slow cooker on low for 6 hours or high for 4 and feel free to move about your day. This recipe is amazing. The flour that coats the roast when it mixes with the juice from the roast as it slow cooks and the onion soup liquid creates its own gravy. The Savory Onion Jam with all the rich dark flavors adds a depth of taste with just a hint of sweet to this dish that elevates what can sometimes be another boring roast meal. I served this over a bed of mashed Cauliflower as a lower carb option, but it would be just as yummy over a bed of rice or mashed potato.
