Berrylicious Blueberry Jam-Filled Cupcakes

These Blueberry Jam-Filled Muffins are a combination of soft, fluffy muffins and a luscious blueberry jam center. Easy to make and even easier to enjoy, these muffins are perfect for a bright beautiful breakfast, brunch, or a tasty snack any time of the day. You can even use this recipe for pancakes! Plus, they can be frozen for later, making them a convenient treat for busy days. So, let's dive into the recipe and create these yummy treats!

Ingredients:

  • 2 c. flour

  • 1/3 c. brown sugar

  • 1/3 c. granulated sugar

  • 1 Tbsp. baking powder

  • 1/2 tsp. salt

  • 1 egg

  • 3/4 c. milk

  • 1/2 c. melted butter

  • 1 tsp. vanilla extract

  • 1/3 c. Sweet Life Jelly Company Blueberry Jam

Instructions:

1. Begin by preheating your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease a muffin tin or line it with cupcake liners for easy removal later on.

2. In a large mixing bowl, combine the flour, brown sugar, granulated sugar, baking powder, and salt. Stir well until all the dry ingredients are evenly mixed.

Stir in all dry ingredients until mixed well. In another bowl, mix all wet ingredients together until well combined.

3. In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until they are well combined.

4. Make a well in the center of the dry ingredients and pour the liquid mixture into it. Gently stir the mixture until the ingredients are just moistened. Be careful not to overmix, as it can result in dense muffins.

Gently stir in all the ingredients until they are all wet. Overmixing can result in less fluffy muffins.

5. Spoon half of the batter into the greased muffin cups (or liners), filling each one about halfway. Now, add a generous teaspoon of Sweet Life Blueberry jam in the center of each muffin. The jam will create a delightful surprise inside each bite. Finally, top off the muffin cups with the remaining batter, ensuring they are about two-thirds full.

Fill the muffin cups in the pan about halfway with batter. Spoon in a teaspoon of Sweet Life Jelly Company Blueberry Jam. Cover with remaining batter until 2/3rds full.

6. Place the muffin tin in the preheated oven and bake for approximately 20 minutes or until a toothpick inserted into the muffins comes out clean. The golden-brown tops and the irresistible aroma will indicate that they are perfectly baked.

7. Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. This step ensures that the muffins maintain their fluffy texture and avoids any sogginess from the residual heat.

Freezing Instructions:

These muffins are so delicious that you might want to make an extra batch for later. Good news! They freeze beautifully. Once the muffins have completely cooled, store them in an airtight container or freezer bag. They can be kept in the freezer for up to 3 months, making them a convenient grab-and-go option whenever your cravings strike.

Pancake Alternative:

If you want to get creative with your muffins, try using them as pancake mix. Just heat the blueberry jam in the microwave for 20 seconds to 1 minute (depending on your microwave) to create a syrup-like consistency. Increase the milk to 1 cup and swirl the blueberry "syrup" on top of the pancake batter as soon as it's in the pan. Let it start to cook before flipping the pancake. Alternatively, gently warm the jam until it becomes liquid and pour it over the pancakes at the table. These variations will add an extra burst of blueberry goodness to your breakfast!
